Oatmeal Coconut Pecan Cookies

These Oatmeal Coconut Pecan Cookies are a great snack or dessert the whole family can enjoy!
Serves: 36
  • 2 sticks softened unsalted butter plus 1 additional tablespoon (1 cup plus 1 tablespoon or 17 tablespoons)
  • ¾ cup brown sugar, packed
  • ⅓ cup granulated sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1¼ cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2½ cups uncooked old-fashioned oats
  • 1 cup finely chopped pecans
  • 1 cup sweetened coconut flakes
  1. Preheat oven to 350º F.
  2. Use a spoon to mix together 2 sticks butter, brown sugar, granulated sugar, eggs and vanilla in a large bowl until well combined, but do not overmix.
  3. In another bowl, combine flour, baking soda, cinnamon and salt.
  4. Mix flour mixture into butter mixture, being sure not to overmix.
  5. Mix in oats, pecans and coconut.
  6. Grease baking sheet with 1 tablespoon butter.
  7. Roll dough into balls, approximately 1¼ to 1½ inches in diameter. Place dough balls onto baking sheet.
  8. Bake approximately 12 minutes until cookies are light golden brown.
  9. Recipe yields 3 dozen cookies.
