So, I have to tell you a tale about two people, one bottle of orange juice and a biscuit.
If you happened to visit my recently launched sister blog, Sweet Enough, you may have read my post for Almond Flour Biscuits. In said post, I talked about my former love for fast food biscuits.
Well, there’s actually more to the story.
The year was 2002. Maybe it was 2003. But that’s neither here nor there.
Anyway, Greg and I had just stopped at McDonald’s for take out breakfast. I ordered my favorite item, a plain biscuit (no egg, no meat, no cheese) with four packets of butter. This is not time for judgement, just support.
So, as I was saying…
I was in my happy place, enjoying my processed biscuit. All was right with the world…UNTIL…as I reached for a sip of juice to wash it all down, I noticed Greg guzzling the remaining contents of the one bottle of orange juice we ordered for two people for some reason. Um, hello! Remember, me? Your wife? The person you were supposed to be SHARING that juice with?
All I got was, “Sorry, I thought you were done.”
I think I gave him the evil eye in between episodes of choking. I’m telling you, I was so parched. 😉 I still bring this up to Greg every once and a while to this day…”Remember that time I was really thirsty from eating that biscuit and you drank ALL the juice?”
In fact, he is the one who told me to share this story. I said, “I need help thinking of something to relate this biscuits to” and so here we are.
But the important thing is that these biscuits are nothing like the fast food variety. Of course, for starters they’re low-carb, made with a mix of coconut and almond flours rather than wheat flour. And they also have cheese..because, well, CHEESE! 🙂
Golden brown on the outside and light and fluffy on the inside, these Low-Carb White Cheddar Biscuits are the bomb diggity!

Learn how to make them
Start by preheating your oven to 400°F. Whisk together melted butter, eggs, parsley, salt, white pepper and garlic powder. Then whisk in coconut flour, almond flour and baking soda. Lastly, stir in the cheese. Use a cookie scoop to drop biscuit dough onto a parchment-lined baking sheet. Bake for 12-16 minutes until biscuits are set and tops are golden brown.
Low-Carb White Cheddar Biscuits [Gluten-Free, Grain-Free]
- 1/4 cup melted butter (cooled a little so not too hot)
- 3 large eggs
- 1 tablespoon finely chopped fresh parsley
- 1/4 teaspoon salt
- 1/8 teaspoon white pepper
- 1/8 teaspoon garlic powder
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 1/4 teaspoon baking soda
- 1/2 cup shredded sharp white cheddar cheese
Preheat oven to 400°F and line baking sheet with parchment paper.
Whisk together melted butter, eggs, parsley, salt, white pepper and garlic powder in a mixing bowl.
Combine coconut flour, almond flour and baking soda in a separate bowl.
Whisk flour mixture into butter mixture.
Stir in cheddar cheese.
Use a cookie scoop to drop biscuit dough onto baking sheet.
Bake for 12-16 minutes until biscuits are set and tops are golden brown.
I used a #30 disher for a yield of 8 biscuits. If you'd like them smaller, you can use a smaller cookie scoop/disher for a yield of 12 biscuits.
