  • Toast bread to your liking.
  • Scoop the avocado flesh into a small bowl and mash with a fork. Spread the mashed avocado onto the piece of toast.
  • Spray a small non-stick skillet or egg pan with non-aerosol, propellant-free olive oil spray. Heat the oil on medium.
  • Once heated, gently crack the egg into the pan and cook over medium-low to medium heat until the egg is done to your liking. If you are cooking a sunny side up egg, you will not flip the egg, just cook until the whites are set (approximately 2-3 minutes). If you are cooking an over easy, over medium or over hard egg, gently flip the egg when the whites are just about set and cook for 30 seconds for over easy, 1 minute for over medium, or 2 minutes for over hard.
  • Place the fried egg on the avocado-topped toast. Sprinkle on salt and pepper. Drizzle on olive oil.
