  • In a large mixing bowl, combine the vital wheat gluten, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and poultry seasoning (if using).
  • In a separate bowl, whisk together the vegetable broth, soy sauce or tamari, and olive oil.
  • Pour the wet ingredients into the dry ingredients and stir to combine. Mix until a dough forms.
  • Knead the dough for about 5 minutes until it becomes elastic and firm. Let it rest for 10 minutes.
  • Meanwhile, prepare the coating by combining the all-purpose flour, garlic powder, onion powder, paprika, salt, and black pepper in a shallow dish.
  • Divide the seitan dough into small pieces and shape them into "chicken" drumsticks or nugget shapes.
  • Heat vegetable oil in a large skillet or deep fryer to about 350°F (175°C).
  • Roll each piece of seitan in the coating mixture until well coated. Shake off any excess coating.
  • Carefully place the coated seitan pieces into the hot oil, being careful not to overcrowd the pan. Fry for about 5 to 6 minutes, or until golden brown and crispy.
  • Remove the fried seitan pieces from the oil and place them on a paper towel-lined plate to absorb excess oil.
  • Repeat the coating and frying process with the remaining seitan pieces.
  • Serve the vegan fried chicken hot with your favorite dipping sauce!

Notes

  • Knead the plant-based chicken mixture until elastic.
  • Shape the chicken pieces however you wish.  Be sure to make them evenly sized.
  • Make sure to evenly coat the vegan chicken pieces.
  • Fry for only 5 to 6 minutes.
  • Store leftovers in the fridge for up to 3 days.
