Grate zucchini using a box grater into a colander. Sprinkle with salt and let it stand for 15 minutes.
Press the zucchini with clean hands or a spatula or spoon to remove excess liquid.
Add zucchini to the bowl with eggs and spices. Stir to combine.
Fold in flour and baking powder until just combined.
Finally, fold in the corn.
Heat olive oil in a skillet over medium-high heat. Scoop the batter and drop it onto the heated skillet.
Cook the fritters for 3-4 minutes per side.
Transfer the fritters onto the paper-lined wire rack while you cook the remaining.
Serve fritters warm with some Greek yogurt or desired condiment on the side.

Corn: This recipe is ideal to make with fresh corn. Fresh corn gives these fritters a sweeter flavor, a little more texture, and slightly crispier edges. It's my favorite choice during corn season. Frozen corn works just as well and is a great year-round option. Just be sure to thaw it completely and pat it dry before adding it to the batter to prevent excess moisture. Any excess liquid may ruin your fritters.Fresh vs Dried Chives: For this recipe, I used dried chives because they're mixed into the batter. Fresh chives can lose some of their bright color during cooking, while dried chives distribute evenly throughout the fritters and still add a mild onion flavor. Feel free to use fresh chives if you prefer. Use 2 tbsp.Air Fryer Cooking: You can make these in the air fryer. Make sure to coat your air fryer basket with perforated baking paper. Lightly spray both the parchment paper and the fritters with cooking oil to help prevent sticking and promote even browning. Air fry the fritters for 8-12 minutes at 390°F, flipping halfway through. The cooking time depends on the thickness of the fritters.
