    • 14 ounces canned coconut milk
    • 1 cup vegetable broth
    • 2 cups mixed vegetables e.g., bell peppers, carrots, broccoli, snow peas
    • 1 tablespoon brown sugar
    • juice of 1 lime
    • salt to taste
    • fresh cilantro or basil leaves for garnish
    • cooked rice or naan bread for serving

    Instructions
