Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
Wash and scrub the potatoes thoroughly. Leave the skins on for extra texture and nutrients. Cut each potato lengthwise into thick wedges, about ½-inch to ¾-inch thick.
In a large bowl, toss the potato wedges with olive oil until they are evenly coated. Add garlic powder, paprika, dried thyme, dried oregano, salt, and black pepper. Toss again until the potatoes are well coated with the seasoning.
Arrange the seasoned potato wedges in a single layer in the air fryer basket, making sure they are not overlapping. Cook in batches if necessary, depending on the size of your air fryer. Air fry at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through the cooking time to ensure even cooking. Check for doneness and crispiness. If needed, cook for an additional 2-3 minutes until the fries are golden brown and crispy on the outside, and tender on the inside.
Once done, remove the steak fries from the air fryer and transfer them to a serving plate. Serve immediately with your favorite dipping sauce or alongside a main dish.
