Ingredients you’ll need for this easy recipe
- 2 Slices of Bread - You can use gluten-free or any type if you’re not avoiding gluten.
- 1 Ripe Fresh Avocado
- Cherry Tomatoes - Instead of sweet cherry tomatoes, you can use grape tomatoesif preferred or use heirloom cherry tomatoes to change up the color. Just try to cut uniform slices of tomato to add to your avocado toast.
- Freshly Squeezed Lemon Juice
- Lemon Zest - You can leave this off if you prefer.
- Salt - I used fine sea salt, but you can use coarse sea salt if you prefer or whatever salt you have on hand.
- Freshly Ground Black Pepper
- Extra Virgin Olive Oil - You can use plain or change up the flavor by using a garlic-infused, lemon-infused or basil-infused extra virgin olive oil instead.
- Balsamic Glaze - My favorite brands are 365, Nonna Pia’s and Thrive Market. You can use balsamic vinegar instead, but note that it won't be as thick.
How to make tomato avocado toast
First, toast the bread slices to your liking.
Then, use a fork to mash the avocado with the lemon juice in a small bowl.
Spread half of the mashed avocado mixture onto each slice of toast.
Slice the tomatoes into thirds and evenly distribute on top of the mashed avocado on both pieces of toast.
Season with salt and pepper and then drizzle on olive oil and balsamic glaze.
Garnish with lemon zest if desired.
Serve immediately.
Tips
- Be sure your avocado is ripe or it will be difficult to mash. For suggestions on how to pick ripe avocados, see my tips below.
- You can easily multiply this recipe if you need more servings.
- If you wanti basil infused oil on your slice of toast, but you don't have any, add some finely chopped basil leaves instead.
- Want a little heat? Feel free to add a few shakes of red pepper flakes to the simple tomato avocado toast recipe.
- Want a little crunch or texture? Sprinkle on some everything but the bagel seasoning on top of the creamy avocado.
- Instead of raw tomatoes, you could add roasted tomatoes on top of your avocado.
- Feel free to swap out the lemon zest and lemon juice for fresh lime juice and lime zest, for a slightly different citrus flavor that is still fantastic.
Frequently asked questions
Use whatever bread you prefer that follows your dietary needs (gluten free, dairy free, etc). If you're looking for some new bread choices, try some whole-grain bread or sourdough bread if you're not avoiding gluten.
When choosing your avocado, you want to go by the color and the feel of your avocado. Pick up your avocado and if it is soft when you apply gentle but firm pressure, it is ripe. You also want to choose a dark green colored avocado.
Storing
This toast recipe is best enjoyed right when you've made it and at room temperature.
The nature of the tomato juices being released from the cherry tomatoes and the moist avocado will naturally make the toast become soggy over time and the avocado will start to brown.
So, I don't recommend waiting to eat it or really trying to save and store it for later.

Instructions
