    Vegan Chocolate Covered Strawberries

    These Vegan Chocolate Covered Strawberries are perfect for enjoying a romantic treat with your sweetie, serving at a soiree or getting your kids to eat more fruit! Make them with both vegan white and dark chocolate or pick your favorite. Either way, these delectable chocolate dipped strawberries are easy to make and ready to enjoy in less than 30 minutes.

    There's nothing like chocolate covered strawberries and champagne to celebrate an anniversary or romantic holiday like Valentine's Day.

    On the other hand, there's also nothing like convincing your kids to eat more fruit by dipping said fruit into chocolate! 

    I mean, how can you resist succulent strawberries coated in either dark decadent chocolate or sweet white chocolate?

    So much to love! ❤

    At first, I planned on only dipping these strawberries in dark chocolate.

    But when I realized I still had an extra bag of vegan white chocolate chips after making my sugar cookie truffles, I figured why not try dipping some of the strawberries in white chocolate?

    Of course, you can opt to use all dark chocolate or all white chocolate depending on your preference.

    How to make vegan chocolate dipped strawberries

    Wash the strawberries under cold water, leaving the stems/leaves intact. Pat dry with paper towels.

    Place the strawberries on a baking sheet lined with parchment or wax paper.

    Add the dark chocolate chips to a small microwave-safe bowl and the white chocolate to another microwave-safe bowl.

    Microwave the dark chocolate chips for 20 seconds and then stir. Return to the microwave and microwave in 10 second intervals, stirring after each one, until chocolate is melted and smooth.

    Microwave the white chocolate chips for 15 seconds and then stir. Return to the microwave and microwave in 10 second intervals, stirring after each one, until chocolate is just melted and smooth.

    Carefully hold onto the leaves of one of the strawberries (or hold it by its stem if it has one) and dip into one of the types of melted chocolate.

    Carefully turn or swirl it around in the chocolate to cover approximately ¾ of the strawberry.  Allow excess chocolate to drip off into the bowl of melted chocolate.

    Place the coated strawberry back onto baking sheet with parchment/wax paper.

    Repeat until you've dipped all of the strawberries, half in the dark chocolate and half in the white chocolate.

    Optionally, you can opt to use the remaining melted chocolate to drizzle each strawberry.

    To do so, dip a small spoon into the melted chocolate and using a back and forth motion, drizzle a line of chocolate across the top of each strawberry. You can use the same color chocolate on each one or use the opposite color.

    If the chocolate coating did not set enough, you may need to wait a few minutes before you drizzle. You can also refrigerate the tray of strawberries for about 5 minutes before drizzling.

    If the chocolate is not as smooth from sitting, you can place it back in the microwave for about 5-10 more seconds and then stir it again. You can also add ⅛ teaspoon of coconut oil before re-microwaving to thin it out which will produce a thinner line of drizzle. 

    Place the tray of chocolate dip strawberries into the refrigerator to set for about 15 minutes until chocolate has hardened.

    Tips

    • Be sure the strawberries are thoroughly dry. Wet strawberries and melted chocolate don't mix.
    • If you microwave the white chocolate for too long, it will re-solidify instead of continue to melt. Be sure to stir after each 10-second interval. You may notice a few small bits of white chocolate that melt into the rest of the melted chocolate as you stir. When these melt in and become smooth, you will no longer need to continue microwaving.
    • If you want to make all the strawberries using only one type of chocolate, use 1 cup of that type of chocolate chips, either dark or white. Follow the melting instructions above for the type of chocolate you are using.

    Variations

    Instead of drizzle, you can use other toppings such as colorful/seasonal sprinkles, shredded coconut or chopped peanuts.

    Storing the Strawberries

    Chocolate covered strawberries are best enjoyed the same day. You can store them in a single layer uncovered in the refrigerator until ready to serve.

    If you are serving them at a party, after removing from the refrigerator, they will last at room temperature out of direct sunlight for a few hours. 

    The strawberries do not keep well after the first day as the chocolate will start to separate from the fruit and the fruit underneath will soften and spoil.

    However, you might be able to get an extra day out of them if they were not left at room temperature.

    Ingredients

    • 1 lb fresh strawberries
    • ½ cup vegan dark chocolate chips (such as Enjoy Life dark morsels or Nestle® Toll House® Simply Delicious dark chocolate morsels)
    • ½ cup vegan white chocolate chips (such as Nestle® Toll House® Simply Delicious white morsels)

    Instructions
