Now that the holidays are over, many of us have committed to maintaining a healthy diet (at least until Valentines Day when we are practically forced to eat chocolate).

So in keeping with the New Year's tradition of healthy eating, I have decided to share one of my favorite smoothie recipes as our first post of 2016!

This Apple Blueberry Lemon Smoothie is so easy to make and has only three ingredients. That is, if you don't count water and ice. 😉

Yup, you read that right! There is no dairy or dairy substitute in this drink.

Chopped apple, blueberries, lemon juice, water and ice are all you need to make this delicious vegan, vitamin-packed power smoothie!

You can enjoy this ridiculously healthy drink for breakfast or as a snack for your Meatless Monday menu.

It's so tasty, I caught my husband slurping up the remains of what we made for this photo shoot. He even had a craving for another round after a hard day of taking down all the Christmas lights.

I don't blame him; it is quite delicious! 🙂 But then again, that's why it's one of my favorites and hopefully, it will be one of yours too!

How to Make This Apple Blueberry Lemon Smoothie

Start by adding  chopped apple, blueberries, lemon juice, cold water and ice cubes to your blender.

I used my Nutri Ninja® but you can use your favorite smoothie blender. Blend until smooth, pour into your favorite glass and sip away all that holiday guilt!

Cheers to a happy and healthy 2016!

My husband was just lamenting that I make too many tropical smoothies and not enough berry one, so thanks for this recipe to get me out of my smoothie rut!

Oh yum! I love smoothies and make them everyday. This flavor combo looks awesome. I use another Ninja blender for my smoothies, but have been looking into getting a blender just for smoothies. Would you recommend the Nutri Ninja?

This smoothie looks delish! Blueberries and lemon are an A++ combo in my book. And I love smoothies that are naturally sweetened instead of being stuffed full of refined sugar.
