    Whatever the history is, there is no doubt that this creamy fruit is delicious and pairs perfectly with cottage cheese for a delicious and nutritious breakfast or snack!

    It's great option when you want a break from your usual breakfast routine or as an easy weekend brunch.

    This was inspired by so many cottage cheese viral recipes like this better homes and garden one. I've never been a fan of cottage cheese by itself, but this high protein breakfast really brings out all the complex and tangy flavors of this toast - especially on a sourdough bread.

    It pairs really well with any breakfast side dish you can think of like air fryer home fries, or air fryer sweet potato breakfast potatoes, or even these zucchini and squash fritters. Check out the recipe below along with other variations you may want to try!

    Ingredients for Avocado and Cottage Cheese Toast

    This avocado and cottage cheese toast has less than 10 ingredients and easy to put together in 10 minutes or less!

    • Eggs: Eggs are superfoods that should be incorporated in a modern diet (if you are not practicing vegan). They are packed with nutrients such as choline, which most people do not get enough of in their daily diet. This recipe uses 2 eggs (for 2 servings).
    • Cottage Cheese: Any variety and milk fat percentage will work. I prefer the 4% milk fat, but you can opt for a lower fat cheese as well.
    • Avocado: For this toast, i've used ½ an avocado for 2 servings. You can also substitute store bought avocado for convenience if you are making a single serving or don't have any ripe avocados at hand.
    • Bread: I find that sourdough bread goes best with this avocado cottage cheese mix as it has a tangy flavor that goes well with the avocado and cottage cheese mixture. You can substitute with any bread of your choice. Use a low/carb or keto wrap option if you are want to keep this under 10g of carbs.
    • Seasoning: This recipe uses chipotle sauce, hot sauce, garlic and onion powders as the seasoning mix. I like the cholula hot sauce, but use any hot sauce you prefer!
    • Salt and Pepper: For taste.
    • Butter (optional): To butter your toast.

    Step-by-Step Instructions

    With 4 easy steps, this toast can be put together in a pinch! Note that you will need hard boiled eggs for this recipe.

    To boil your eggs, gently place your uncooked eggs in boiling water and let them boil for 9-11 minutes. Once boiled, place them in an ice bath to cool them down before peeling eggs. Once cool, gently crack the shell and peel the outer shell.

    1. Step 2: Add in ½ ripe avocado, seasoning and cottage cheese into the same bowl. Mix well. The mix consistency is similar to that of an egg salad.

    1. Step 4: Spread your mixture evenly on the toasted bread. Drizzle with hot sauce for an extra spicy kick!

    Tip: Butter your toast on a skillet pan or griddle instead of using a toaster - i've found that the slow process of toasting lets the butter seep into the bread well and elevates the taste even further!

    Diet Substitutions

    Gluten Free: Since the bread is the only gluten item, swap for a gluten free bread or a gluten free wrap to make this recipe.

    Low Carb/Keto: Swap out the bread for a low carb keto bread or wrap like this one, you can make this under 10g of net carbs.

    Recipe Variations

    The Avocado and Cottage cheese blend is mild, so you can really customize with any flavor you like! Some other options include:

    • Make your own guacamole seasoning: Not a fan of chipotle or hot sauce? Check out this homemade guacamole seasoning recipe that uses lime, onion powder, garlic powder, cayenne pepper instead.
    • Everything Bagel Seasoning - instead of using garlic powder, onion powder and salt, use everything bagel seasoning instead as it has most of those ingredients included.
