I don't know what it is, but every time i bake nuts in my oven, my whole house smells like a scented candle! Whether they are savory like this version or sweet like these cinnamon sugar pecans or maple pecans, the scent is just irresistible!
But even better is the taste! This recipe is simple, easy to make and comes together in about half hour. Plus it's vegan and gluten free, making it appealing for holiday gatherings.
Ingredients
- Nuts – Cashews, pecans and almonds are ideal as they mix well with herb flavors. Use whole cashews and almonds and pecan halves so all the nuts are fairly similar in size and can roast evenly.
- Olive Oil - To help soak up the herbs and coat the nuts.
- Fresh rosemary and thyme leaves – Use fresh leaves. I do not recommend dried herbs for this recipe.
- Cumin – A small amount adds so much flavor - one of my favorites!
- Paprika – Adds a bit of spice to these savory blend. Use chili powder if you would like to make your nuts a bit more spicy.
- Sugar – Balances out the earthy flavors of the herbs. I used raw sugar in this recipe, but you can use regular cane sugar in making this.
- Salt & pepper

Step-by-Step Instructions
In just a few steps, you can have perfectly roasted nuts. First, preheat your oven to 325 degrees.
Step 1: In a small saucepan, let the oil gently heat up on the stove (medium heat). Add in the rosemary and thyme and let it continue to heat for 2-3 minutes until the herbs are infused into the oil. Allow the mixture to cool down for 5 minutes. Mix in the sugar and the remain spices to form the coating.
Step 2: Spread the nuts (cashews, almonds and pecans) on the baking sheet and mix in all the ingredients. Mix well so that the nuts are coated evenly.
Step 3: Bake at 325 degrees for 20-25 minutes. Stir or shuffle your nuts every 10 minutes so they roast evenly.
